Traditional Beurre Blanc
Serves 6
Beurre Blanc is a classic French sauce, generally used for fish, however I find it is great with chicken too, or any other subtle dish. The sauce is basically a wine/ vinegar reduction to which butter is added, translated means White Butter.

Ingredients
  1. - 5 or 6 Shallots
  2. - 250 ml wine vinegar (can use half vinegar and half white wine)
  3. - 325 ml fish stock (can use chicken if for a chicken dish)
  4. - 1 cup of cold butter (cubed)
  5. - ground pepper
Instructions
  1. Finely chop the shallots and add to a pan with the liquids (wine, vinegar and stock.
  2. Reduce by two-thirds
  3. StrainRemove from heat and whisk in the butter
  4. Keep warm and serve
Notes
  1. Herbs maybe added to create that extra "zing"; try dill or chervil or even a squeeze of lemon.

Ingredients
  1. - 200 gm Gruyere Cheese
  2. - Qty Dry White Wine
  3. - 30 ml Kirsch
  4. - 1 clove of Garlic
  5. - Freshly Ground Pepper
  6. - whatever you wish to dip in the cheese, (bread, cured meats, vegetables etc.)
Instructions
  1. Rub the base of an earthenware Fondue dish with the Garlic clove.
  2. Slice the cheese into very thin slices and add to the dish.
  3. Cover the cheese with the dry White Wine.
  4. Stir over low heat until the cheese has melted and add some Freshly Ground Pepper to taste.
  5. Add the Kirsch.
  6. Now go ahead and dip all your favorite ingredients, while bread is very popular and easy in Switzerland its not uncommon to use cured meats or raw ham cut into very thin slices.
  7. Yum!

Happy Happy days! Duck, one of my all time favorites! Got to be happy with this one! This great duck recipe is a must do, especially if you like duck and mushrooms. Ill certainly be giving it a go!
