Ingredients
  1. - 4 cups plain flour
  2. - 7 tsp baking powder
  3. - 2 pinches of salt
  4. - 4 eggs
  5. - 2 cups of sugar
  6. - 120 gm melted butter
  7. - 1 cup milk
  8. - 2 tsp vanilla extract
Instructions
  1. Pre heat oven to 160c
  2. Sift flour
  3. Add baking powder, salt, and sugar
  4. Mix wet ingredients
  5. Combine wet and dry ingredients
  6. Spoon into muffin moulds
  7. Bake for 15 mins or until cooked

Ingredients
  1. - 5 Eggs
  2. - 150 gm Castor Sugar
  3. - 1/2 tsp Lemon Zest
  4. - 150 gm Cake Flour
  5. - 50 gm Melted Butter
Instructions
  1. Grease and dust 20cm tin with flour.
  2. Pre-heat oven to 185oC.
  3. Whisk eggs and sugar over a bain-marie.
  4. Transfer to electric mixer and whisk until thick and creamy.
  5. Slow the mixer or whisk down until the bubbles in the mix become uniform in size.
  6. Add the zest and fold in the flour and butter.
  7. Pour mix into tin and bake for approximately 20 minutes.
  8. Cake is cooked when it springs back when pressed lightly in the centre. It will also shrink a little from the sides.
