Ingredients
  1. - 15g Fresh Yeast
  2. - 200g Water (37 degrees)
  3. - 200g Strong Flour (bakers flour)
  4. - 500g Strong Flour (bakers flour)
  5. - 320g Water (37 degrees)
  6. - 10g Salt
Instructions
  1. 1. Mix yeast with the 200g water and 200g flour. Leave to prove.
  2. 2. Pour the 320g water over the sponge and mix to combine.
  3. 3. Add flour and salt, knead until the mixture forms a smooth, elastic dough.
  4. 4. Prove until doubled in volume.
  5. 5. Knock back, shape, prove and bake at 220C for 20 mins (for rolls)
